Recipe of the Day | Apple & Celery Soup

1 peeled onion diced

1 stalk celery (about 325 g) peeled and diced

1 peeled and chopped tart apple (about 175 g) diced

2 tablespoons canola oil

600 ml vegetable broth

1 small stalk of fennel, diced

100 ml soy cream

Salt + Pepper to taste

 

Preparation

Heat half the oil in a pan and fry the onion in it for 2-3 minutes until it becomes transparent.

Add the celery and apple and fry another minute. Add broth, heat until it reaches boiling point, and leave on low heat about 45 minutes.

Fry the fennel in the remaining oil in a skillet over medium heat, stirring until it turns brown. Season with salt and pepper and keep warm.

After the cooking time of the soup, blend all ingredients with a whisk. Then strain the soup and put it back in the pot on the fire.
Add the soy cream and cook for 1 minute. Season with salt and pepper to taste, serve hot in bowls and garnish with fried fennel.

Sopa de manzana y apio

Ingredientes para 2 personas

1 cebolla pelada cortada en dados

1 tallo de apio (unos 325 g) pelado y cortado en dados
1 manzana ácida (unos 175 g) pelada y cortada en dados
2 cucharadas de aceite de colza
600 ml de caldo de verduras

1 tallo pequeño de hinojo en dados

100 ml de crema de soja
Sal y pimienta al gusto

 

Preparación

Calentar la mitad del aceite en una olla y freír en él la cebolla unos 2-3 minutos hasta que se torne transparente. Añadir el apio y la manzana y freír otro minuto. Agregar el caldo, calentar hasta que llegue a punto de ebullición, y dejar a fuego bajo unos 45 minutos.

Freír el hinojo en el resto de aceite en una sartén a fuego medio sin dejar de remover hasta que se torne marrón. Sazonar con sal y pimienta y mantener caliente.

Pasado el tiempo de cocción de la sopa, triturar todos los ingredientes con una batidora. A continuación, colar la sopa y volver a ponerla al fuego en la olla.

Agregar la crema de soja y dejar cocinar durante 1 minuto. Sazonar con sal y pimienta al gusto, servir caliente en tazones y adornar con el hinojo frito.
